La Carte Prestige Gazebo is a luxury tasting menu (SCR 1500 per person) served in an intimate seaside setting. The tableside flambé preparations add an element of theatre, while the seaside gazebo setting provides privacy and romance — ideal for special moments. An immersive culinary experience.

Carpaccio Dorade Royale
Fresh dorado drizzled with virgin olive oil, fresh herbs, and a hint of piment d’Espelette, creating a light and zesty introduction.
Tuna Tartar
Locally caught A+ yellowfin tuna with ginger, lemon, and spring onions, topped with Parmesan chips. Prepared live at the table — a Del Place signature.
Farandole Exotique
A tropical medley of octopus, crayfish, and coconut palm heart, brightened with yuzu — showcasing the ocean’s bounty and island freshness.
Fillet de Bourgeois (Red Snapper Fillet)
Baked in banana leaf with breadfruit croquettes, coconut-lemongrass sauce, salsa, Creole chutney, and rice — a true taste of Seychelles.
Thon Mi-Cuit des Seychelles
Half-Cooked Premium-grade tuna served with sweet mashed potatoes, and mango & papaya chutney — balancing sweetness and umami.
Crevettes Flambée au Rhum de Takamaka
Prawns sautéed with Chinese cabbage, onion, garlic, sesame, shiitake mushrooms, and mango salad, flambéed tableside with local Takamaka rum.
Crevette Oso de Madagascar
Madagascar prawns pan-fried in aromatic garlic butter — rich and indulgent.
Grilled Lobster
Rock lobster flambéed before your eyes with garlic butter, basil, pommes frites, and pan-fried vegetables — a showstopping experience.
Wagyu Beef Fillet
Premium Wagyu, flambéed with cognac at the table. Served with jacket potatoes (pommes en robe de champs) and a choice of sauce — green pepper or tarragon in red wine. A luxurious land-based alternative to the seafood-rich menu. (supplement SCR400)
